Vic was originally appointed to review the contractual arrangements between the University and their suppliers in 1997. This resulted in substantial savings on the charges being made by the contractor, and the project developed into the monitoring of the catering services over the next three years. In 2000, Vic carried out a complete review of campus catering, and as a result of this he worked with the University Project Team on the relocation and re-design of student catering facilities at St Mary's Road. This resulted in a new refectory and retail shop being constructed, which became operational in June 2001. Revenue has increased by over 50% since it's introduction. Vic has an onward going role with the University, advising them on all aspects of catering from budgets to monitoring and facilities design.
